Ingredients

• 6 white peaches, washed and cut into pieces
• 2 large ripe pineapples
• 20 g fresh ginger
• 25 g dried lemongrass (or fresh lemongrass)
• 30 g fresh mint
• 2 liters water (for infusion)
• 500 ml water (for blending)
• 1 cup powdered sugar or granulated sugar (optional, or to taste)
• 1 teaspoon vanilla extract
• Fresh lemon juice (optional)

 

Preparing the Lemongrass

Fresh lemongrass can be used immediately, or you can prepare it ahead of time by washing it thoroughly and drying it in the sun until completely dry. Once dried, store it in an airtight container at room temperature for future use. Store-bought dried lemongrass also works perfectly for this recipe.

 

Instructions

Step 1: Prepare the Pineapple Infusion

Wash the pineapples thoroughly.

Peel the pineapples and reserve the flesh.

Place the pineapple peels into a large pot with the dried lemongrass.

Pour in 2 liters of water.

Bring to a boil, then reduce the heat and simmer for 10–15 minutes.

Step 2: Blend the Fruit

Cut the pineapple flesh into chunks.

Peel the ginger.

Cut the white peaches into pieces.

Blend the pineapple, peaches, and ginger together using approximately 500 ml of water.

If using a juicer, reserve the pineapple pulp. Do not discard it.

 

Step 3: Infuse the Juice

Pour the blended fruit mixture into the hot pineapple peel infusion.

Add the fresh mint.

If you used a juicer, add the reserved pineapple pulp to the pot as well for additional flavor and richness.

Cover the pot and allow the mixture to steep for 30 minutes to 1 hour.

 

Step 4: Strain

Strain the juice through a fine mesh strainer.

For a smoother, professional-quality juice, strain a second time using cheesecloth.

Step 5: Finish the Juice

Add the vanilla extract.

Sweeten with powdered sugar or granulated sugar to your preferred taste, if desired.

Mix well until completely dissolved.

For additional freshness and a slightly longer refrigerated shelf life, add freshly squeezed lemon juice if desired.

Refrigerate until well chilled before serving.
