Naturally sweet, refreshing, and bursting with tropical flavor, this business-style pineapple juice combines fresh ripe pineapples, ginger, and lemongrass to create a delicious drink that’s perfect for home enjoyment or commercial production.

Ingredients

  • 5 large ripe pineapples
  • 80 g fresh ginger
  • 80 g fresh lemongrass (leaves only)
  • 4 liters water
  • Sugar, to taste (optional)
  • 2 packet vanilla sugar or 2 teaspoons vanilla extract (optional)

 

Instructions

  1. Prepare the Ingredients

Wash the pineapples thoroughly.

Peel the pineapples and set the peels aside.

Cut the pineapple flesh into chunks.

Wash the ginger and lemongrass.

Remove the tough outer leaves from the lemongrass and use only the tender leaves.

 

  1. Prepare the Infusion

In a large pot, combine:

  • Pineapple peels
  • Lemongrass
  • 3-4 liters of water

Bring to a boil.

Reduce the heat and simmer for 15 minutes.

 

  1. Add the Pineapple

Blend the pineapple chunks together with the fresh ginger until smooth.

Remove the pot from the heat.

Immediately pour the pineapple and ginger mixture into the hot infusion.

Cover the pot and allow everything to steep until completely cooled.

 

  1. Strain

Strain the juice through a fine mesh strainer or cheesecloth.

For a smooth, professional-quality juice, strain a second time if desired.

 

  1. Finish

If desired, add:

  • Sugar, to taste
  • Vanilla sugar or vanilla extract (optional)

Mix well until completely dissolved.

Refrigerate until well chilled before serving.
