Wash the pineapples thoroughly.
Peel the pineapples and set the peels aside.
Cut the pineapple flesh into chunks.
Wash the lemongrass, ginger, and mint (if using).
Remove the tough outer leaves from the lemongrass and use only the tender leaves.
Place the dried hibiscus flowers into a large heatproof bowl.
In a large pot, combine:
Bring to a boil.
Reduce the heat and simmer for 15–20 minutes.
Carefully pour the hot pineapple and lemongrass infusion over the dried hibiscus flowers.
Blend the pineapple chunks together with the fresh ginger until smooth.
Immediately pour the pineapple and ginger mixture into the hot hibiscus infusion.
If desired, add the fresh mint leaves.
Cover the bowl and allow everything to steep until completely cooled.
Strain the juice through a fine mesh strainer or cheesecloth.
For a smoother, professional-quality juice, strain a second time.
Add sugar to taste.
Stir until completely dissolved.
Refrigerate until well chilled before serving.
