Ingredients

  • 20 ripe sweet passion fruits
  • 3 liters water
  • 500 g cane sugar, or to taste
  • 1 tablespoon anise seeds
  • 30 g fresh mint
  • 3 ripe mangoes, peeled and diced (optional)

Instructions

  1. Wash the passion fruits thoroughly.
  2. Cut each passion fruit in half and scoop the pulp into a large pot.
  3. Add the 3 liters of water and the anise seeds.
  4. Bring the mixture to a gentle boil, then reduce the heat and simmer for about 10 minutes.
  5. Remove the pot from the heat and immediately add the fresh mint.
  6. Cover and allow the mixture to infuse until completely cooled.
  7. Strain the juice through a fine-mesh sieve, gently pressing the pulp to extract as much juice as possible.
  8. For maximum flavor, add a small amount of fresh water to the remaining pulp, stir well, and strain a second time.
  9. If using mangoes, blend the mango flesh until completely smooth, then stir it into the strained passion fruit juice.
  10. Strain once more if desired for an extra-smooth texture.
  11. Add the cane sugar and stir until completely dissolved.
  12. Refrigerate until well chilled before serving.

Tips

  • Choose fully ripe passion fruits with slightly wrinkled skin for the sweetest flavor.
  • Adjust the sugar according to the sweetness of your fruit.
  • Serve over ice for the most refreshing taste.
  • Garnish with fresh mint leaves or passion fruit pulp.
  • The optional mango gives the juice a naturally creamy texture and balances the tartness of the passion fruit beautifully.
