- ½ tablespoon minced orange bell pepper

- 3 tablespoons garam masala
- 1 teaspoon ground turmeric
- ½ teaspoon cayenne pepper (adjust to taste)
- 1 large tomato, finely diced
- Salt and black pepper, to taste
- ¾ cup fresh coconut milk
- 1 tablespoon brown sugar
- 6 large eggs
- Fresh cilantro or parsley, for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and cook for 3–5 minutes, stirring occasionally, until softened and lightly golden.
- Stir in the grated ginger and a pinch of salt. Cook for about 1 minute until fragrant.
- Add the minced red, orange, and yellow bell peppers. Cook for another 2 minutes.
- Sprinkle in the garam masala, turmeric, and cayenne pepper. Stir continuously and cook for 1 minute to toast the spices.
- Add the diced tomato, season with salt and black pepper, and cook for about 3 minutes until the tomatoes begin to soften.
- Pour in the fresh coconut milk and stir in the brown sugar. Bring the mixture to a gentle simmer.
- Using the back of a spoon, make six small wells in the sauce. Carefully crack one egg into each well.
- Season the eggs lightly with additional salt and black pepper, if desired.
- Cover the skillet and cook over medium-low heat until the eggs reach your preferred doneness:
- 5 minutes for soft, runny yolks
- 7–10 minutes for firmer yolks
- Remove the skillet from the heat and let it rest, covered, for about 5 minutes before serving.
