Baobab Juice (Bouye Juice)

Baobab juice is a refreshing and creamy West African beverage made from the fruit of the baobab tree, often called the “Tree of Life.” The fruit naturally has a tangy, citrus-like flavor and is widely enjoyed throughout countries such as Senegal, Mali, Guinea, Côte d’Ivoire, and other parts of West Africa.

Baobab is naturally rich in vitamin C, dietary fiber, antioxidants, calcium, potassium, and magnesium, making it a nutritious ingredient for refreshing drinks and desserts.

This easy homemade baobab juice combines the tangy flavor of baobab with fresh mint, creamy evaporated milk, and vanilla for a delicious drink that can be served chilled or frozen into popsicles.

Ingredients
500 g (½ kg) baobab powder
2 liters water
2 bunches fresh mint
1 can (14 oz/ 397 g) unsweetened evaporated milk
2 packets vanilla sugar
Sugar to taste (about 400-500 g, or your preferred sweetener)

Instructions

1. Combine the baobab powder and water in a large bowl, stirring until well mixed.
2. Strain the mixture through a fine-mesh sieve or cheesecloth to remove any fibers.
3. Pour the strained liquid into a pot. Add one bunch of fresh mint and bring to a gentle boil.
4. Remove from the heat, add the remaining bunch of mint, and let it steep until the juice is well infused.
5. Allow the mixture to cool completely.
6. Stir in the sugar and vanilla sugar until dissolved.
7. Strain once more for a smoother texture.
8. Add the evaporated milk and mix well.
9. Refrigerate until well chilled before serving, or pour into popsicle molds and freeze.

Tips
Adjust the amount of sugar to your taste.
Serve well chilled for the best flavor.
Store in an airtight container in the refrigerator for up to 3 days.
Yield: Approximately 2.5-3 liters (10-12 servings)
