Ingredients
For Attiéké (CASSAVA COUSCOUS) with palm oil (Optional)
Instructions
Place the desired amount of dry packaged attiéké (Cassava Couscous) into a large microwave-safe bowl.
Pour in an equal amount of hot water.
For example:
Cover the bowl and let it sit for 5 minutes, allowing the attiéké to absorb all of the water.
Fluff and mix the attiéké with a fork.
Cover the bowl again and microwave for 3 minutes.
Remove from the microwave and fluff again with a fork.
Add:
Mix well until evenly combined.
Cover and microwave for another 3 minutes.
Fluff one final time before serving.
To Make Attiéké (Cassava Couscous) Red Clam Oil
For a delicious Ivorian-style variation, drizzle 2–3 tablespoons of warm red palm oil over the cooked attiéké.
Mix thoroughly until the attiéké is evenly coated with the vibrant red palm oil.
