Curried Coconut Eggs

Ingredients

  • 2–3 tablespoons olive oil
  • 1 small onion, finely diced
  • 2 tablespoons freshly grated ginger
  • ½ tablespoon minced red bell pepper
  • ½ tablespoon minced orange bell pepper
  • ½ tablespoon minced yellow bell pepper
  • 3 tablespoons garam masala
  • 1 teaspoon ground turmeric
  • ½ teaspoon cayenne pepper (adjust to taste)
  • 1 large tomato, finely diced
  • Salt and black pepper, to taste
  • ¾ cup fresh coconut milk
  • 1 tablespoon brown sugar
  • 6 large eggs
  • Fresh cilantro or parsley, for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and cook for 3–5 minutes, stirring occasionally, until softened and lightly golden.
  3. Stir in the grated ginger and a pinch of salt. Cook for about 1 minute until fragrant.
  4. Add the minced red, orange, and yellow bell peppers. Cook for another 2 minutes.
  5. Sprinkle in the garam masala, turmeric, and cayenne pepper. Stir continuously and cook for 1 minute to toast the spices.
  6. Add the diced tomato, season with salt and black pepper, and cook for about 3 minutes until the tomatoes begin to soften.
  7. Pour in the fresh coconut milk and stir in the brown sugar. Bring the mixture to a gentle simmer.
  8. Using the back of a spoon, make six small wells in the sauce. Carefully crack one egg into each well.
  9. Season the eggs lightly with additional salt and black pepper, if desired.
  10. Cover the skillet and cook over medium-low heat until the eggs reach your preferred doneness:
  • 5 minutes for soft, runny yolks
  • 7–10 minutes for firmer yolks
  1. Remove the skillet from the heat and let it rest, covered, for about 5 minutes before serving.
  2. Garnish with fresh cilantro or parsley, if desired.
