Ginger Juice

A Bold and Refreshing Homemade Favorite

Ginger juice is one of the most popular homemade beverages across West Africa, loved for its bold flavor, refreshing taste, and invigorating aroma. This recipe combines fresh ginger with citrus fruits, passion fruit, aromatic spices, and fresh mint to create a perfectly balanced drink that’s both refreshing and full of character.

Instead of relying on artificial flavors, this recipe uses fresh ingredients to produce a naturally vibrant juice that’s perfect for family gatherings, celebrations, hot summer days, or simply enjoying a refreshing homemade beverage. Serve it chilled, bottle it for later, or freeze it into sachets for a delicious frozen treat.

Ingredients

  • 1 kg fresh ginger, washed
  • 5 large sweet oranges, washed
  • 5 large lemons, washed
  • 5 large ripe passion fruits
  • 30 g fresh mint
  • 1 tablespoon anise seeds
  • 2 cinnamon sticks
  • 4 Guinea long peppers (African long pepper)
  • 2 liters – 2.5L water
  • 500 g white cane sugar, or to taste
  • 2 packets vanilla sugar

Instructions

  1. Wash all the ingredients thoroughly.
  2. Peel the ginger and cut it into smaller pieces.
  3. Blend the ginger with a portion of the water until smooth.
  4. Cut the passion fruits in half and scoop the pulp into a large bowl.
  5. Add the blended ginger and the remaining water to the bowl with the passion fruit pulp. Stir well to allow the ginger and passion fruit to release their flavor into the water.
  6. Strain the mixture through a fine-mesh sieve or cheesecloth, pressing well to extract as much juice as possible.
  7. Pour the strained juice into a large pot.
  8. Add the anise seeds and bring the mixture to a gentle boil.
  9. Reduce the heat and simmer for about 5 minutes.
  10. Remove the pot from the heat and immediately add the fresh mint, cinnamon sticks, and Guinea long peppers.
  11. Cover and allow the mixture to infuse until slightly cooled.
  12. Juice the oranges and lemons.
  13. Once the ginger infusion has cooled slightly, stir in the fresh orange juice and lemon juice.
  14. Add the white cane sugar and vanilla sugar, stirring until completely dissolved.
  15. Taste and adjust the sweetness if needed.
  16. Refrigerate until well chilled before serving.

Tips

  • Use fresh, juicy ginger for the best flavor.
  • Do not add the lemon and orange juice while the mixture is boiling, as this helps preserve their fresh flavor.
  • Adjust the sugar according to your taste.
  • Serve over ice with a few fresh mint leaves for an extra refreshing touch.
  • For a milder ginger flavor, simply add a little more water after straining.

Yield

Approximately 3.5 to 4 liters (14–16 servings)
