Breakfast Egg Wrap

Ingredients
- 3largeeggs
- ½tomatodiced
- 1tablespoonchopped onionor just a small handful
- 1-2sliceschicken hamcut into small pieces
- 2-3tablespoonsmozzarella cheese, shredded
- 1tortilla wrap
- Salt and pepperto taste
- 1tablespoonolive oil
Special Notes
- You can add spinach, bell peppers, or mushrooms for extra flavor.
- Swap mozzarella for cheddar or your favorite cheese blend.
Instructions
In a bowl, break the eggs. Add salt and pepper to taste, then beat well until smooth.
Heat olive oil in a non-stick pan over medium heat. Add the diced tomato and onion. Cook for 1–2 minutes, just until soft.
Pour the beaten eggs into the pan over the tomato and onion. Let cook for about 2 minutes, or until the bottom is lightly set but still soft on top.
Place the tortilla directly on top of the eggs, pressing gently so it sticks and covers the whole surface.
Once the eggs are firm enough to flip, carefully turn the whole wrap over so the tortilla is now on the bottom.
Sprinkle the chopped chicken ham evenly over the eggs. Add mozzarella cheese on top.
Fold the edges of the tortilla to form a wrap. Let it cook for another 1–2 minutes on each side until the cheese melts and the tortilla is golden brown.
Slice and enjoy warm, perfect with a cup of tea, coffee, or fresh juice!
